You can also plan to make enough for multiple meals that you can store. Not only does it make the next day’s lunch easier, but you’d also be surprised at how much waste is saved by using leftovers up. Think it’s not as good second time around? Think again. Just by adding a dollop of Hellmann’s mayonnaise to the remainder of Sunday’s roast dinner, lunch on Monday is turned into a delicious roast chicken sandwich with some salad leaves and tomato. Got some leftover roast pork cuts? A spread of Colman’s mustard on whole-wheat bread makes for a delicious Monday lunchbox filler. A little planning can go a long way.
